My name is Cara, and I am addicted to canned tomato soup. I also need to admit, I make a few dynamite meals using original ingredients for which I haven't been able to find replacements. But, my search continues, as I consider myself a “Queen of Substitutions". If I am missing an ingredient, I toss in a little bit of this or that, and to my amazement, it usually tastes GREAT! However, It isn't always easy to find all natural, low fat, low sodium, no high fructose corn syrup – etc., yadda, yadda, yadda – and I can be left crying in the soup aisle at the grocery store…

One of my favorite dinners is my grandma's One Pot Pork Chop Supper. It contained tomato soup. (In fact, most of my favorite recipes contain tomato soup). I have given this meal a makeover, and consider it a very definite, happy medium.

Ingredients:

  • 4 pork chops 
  • 1 can of tomato sauce 
  • 1/2 cup water 
  • 1 tablespoon Worcestershire sauce 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon oregano 
  • 6-8 potatoes (original calls for russet, but I mix 3 sweet potatoes and 3 yukon), quartered 
  • 4 carrots sliced however you please

Instructions: 
Cut and place potatoes in a crock pot. In a small bowl, mix together sauce, water, Worcestershire, salt and oregano. In a skillet, sear pork chops on high heat (about 1-2 minutes each side). Place chops on top of potatoes in crock pot, pour sauce over the top. Cook on low 6-8 hours. Enjoy!
