There is something about the first snow of the season that speaks to my soul and sets me into a frenzy every year. So what is my obsession this year? Soups. Warm, delicious, healthy, and comforting soups.

However, I have two kids, two dogs, one husband, a household to run. On top of all of that I also run my own business. So in order for me to maintain the huge supermom ’S’ on my chest I must be as efficient as possible.

My solution for this winter season is simple but very effective. I have scoured the Internet for healthy, freezer-friendly soup recipes and then one to three times a week I make double or triple batches (depending on just how yummy I think it may be).

My favorite part is freezing the extra in mason jars, leaving about two inches for expansion, and then on my busier days I pull out a jar in the morning, loosen the seal and put the jar in my crock pot/slow cooker in a water bath and re-heat all day. PRESTO!

A healthy, homemade dinner is ready whenever we are and most soups are good for six months or more in your freezer. That means I have quite a few options for dinners.

Side note: I love to dress this up with sautéed fresh corn and diced fresh roasted green chilies. Prepare separate and add just before serving. Mmmmmm…
