Apple Pumpkin Oats
Take your healthy bowl of oatmeal to the next level with fall-inspired toppings and flavors.
- 1 apple of choice
- 2/3 cup pumpkin puree (not the pumpkin pie mix)
- 1 cup almond or coconut milk
- 1/2 cup rolled oats
- 1/2 Tbs coconut oil
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
- 1-2 Tbs pumpkin puree
- Dash of cinnamon, nutmeg and ground ginger
- 1 tsp grade B maple syrup
- Chopped walnuts
- Chopped pecans
Warm a medium size pot over medium heat. While heating up chop your apple and open the can of pumpkin puree. Of course you can always use fresh pumpkin puree from this season’s pumpkins!
Once pot is heated add the coconut oil and chopped apple, sauté for a few minutes. Next add in your oats and milk. Let the mixture thicken a bit then add the pumpkin puree and stir together. Let meld for 3-5 minutes, lower your heat and add in your spices. Once your desired consistency is reached, pour oats into a bowl.
For the topping combine the pumpkin, spices and syrup and pour all over the oats, add the chopped nuts over top and enjoy this hearty fall-inspired dish!
