When you need a little pick me up, reach for one of these energy packed, nutrient dense Apricot Energy Balls.


  • 1/2 cup dried apricots
  • 1/4 cup dried figs
  • 1/4 cup raw cashews
  • 2 tbsp agave syrup
  • 4 ounces dark chocolate


In a food processor, pulse the apricots, figs, and cashews together until the mixture becomes crumbly. Once the mixture is combined add the agave. The mixture is ready once it forms into a ball.

Divide the mixture into 11 to 13 balls and place in the refrigerator to set.

Melt the chocolate in a saucepan over low heat, keep an eye on the chocolate so to not burn. Roll each ball around using a fork. Once all the balls are covered in chocolate place them back in the refrigerator to set the chocolate. Once the little guys are firm, enjoy throughout the week for a quick energy boost.
