Yield: 4 cups


  • 2 c. couscous
  • Olive oil, to coast grains
  • Salt and freshly ground pepper
  • 2 c. boiling water or broth


  1. Place couscous in a bowl; drizzle with olive oil and season with salt.
  2. Rub couscous between your hands to coat all of the grains with the olive oil.
  3. Pour boiling water over the couscous and give a quick stir. Cover bowl with plastic wrap and let stand 5-7 minutes.
  4. Remove plastic wrap and fluff with a fork.
