Yield: 4 cups
- 2 c. couscous
- Olive oil, to coast grains
- Salt and freshly ground pepper
- 2 c. boiling water or broth
- Place couscous in a bowl; drizzle with olive oil and season with salt.
- Rub couscous between your hands to coat all of the grains with the olive oil.
- Pour boiling water over the couscous and give a quick stir. Cover bowl with plastic wrap and let stand 5-7 minutes.
- Remove plastic wrap and fluff with a fork.
