These muffins are full of fiber and nutty crunch.


  • Cooking spray
  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup oat bran
  • 1/4 cup cornmeal
  • 2-1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup 1% milk
  • 1/4 cup vegetable oil
  • 1 large egg, slightly beaten
  • 1/4 cup pecan pieces


  1. Preheat oven to 400 degrees. Lightly coat 12 muffin cups with cooking spray. In a large bowl, thoroughly combine the dry ingredients and make a well in the center with a large mixing spoon.
  2. In a small bowl, stir together the remaining ingredients and pour into the well of the dry ingredients. Stir until just combined.
  3. Spoon the batter into the sprayed muffin cups, filling them 2/3 full. Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Let the muffins cool in the pan for 5 minutes and turn out onto a wire rack to cool.
