Yield: twelve 1/4 servings


  • 2 15-ounce cans of garbanzo beans, rinsed and drained
  • 2 tsp. extra-virgin olive oil
  • 1 1/2 tsp. lemon juice
  • 1 1/4 tsp. smoked paprika
  • 1/2 tsp. sea salt
  • 1/8 tsp. cayenne


  1. Preheat oven to 425 degrees F
  2. In a large mixing bowl combine all ingredients and toss gently
  3. Put the tossed mixture into a large rimmed baking sheet and spread out garbanzo beans in a single layer
  4. Bake for about 40 minutes or until the beans are dry and crisp, tossing every ten minutes.
  5. Let the beans cool slightly and then serve them in small dishes or cupcake liners as appetizers or use them on top of a salad for croutons.
