Please pre-cook the quinoa before making the pancakes…quinoa can be bitter! The good news is that nearly all of the bitterness is on the outside hull… This can be removed by vigorous rinsing in a fine mesh strainer before cooking. Place the rinsed ½ uncooked quinoa in a pan with 1 C of water… Bring to a boil, then lower to a simmer with a lid on. Cook for 15 min. Let sit for 5 minutes and then fluff with a fork.


  • 1 C pre-cooked quinoa
  • 1/2 tsp vanilla extract
  • ¾ C flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 egg
  • 1 egg white
  • 1 Tbs melted butter
  • ¼ C milk
  • 2 Tbs honey


  1. In a medium bowl, have kids whisk together 1 C of the pre-cooked quinoa, ½ tsp of vanilla extract, ¾ C of flour, 2 tsp of baking powder, and ½ tsp of salt into a bowl. In another medium bowl, have kids whisk together 1 egg, egg white, 1 Tbs of melted butter, ¼ C of milk, and 2 Tbs of honey until smooth. Have kids then add egg mixture to flour mixture and whisk to combine. 
  2. Lightly coat your nonstick skillet with some melted butter and heat over medium-high. Drop batter by heaping 2 tablespoonfuls into skillet. Cook until bubbles appear on top, about 2 minutes. Flip cakes and cook until golden brown on underside, another 2 minutes. Wipe skillet clean and repeat with more butter and remaining batter (reduce heat to medium if over-browning).
